Spices contain essential oils and natural flavour compounds that give them their characteristic taste. Over time, however, these are lost. This happens particularly when spices are stored for a long time or kept in unsuitable conditions. Light, oxygen, heat and moisture cause the aromas to fade, and with them the flavour.
It is often said that whole spices are generally better than ground ones. However, it is not quite that simple. The key factor is how carefully a spice is processed, stored and packaged. If spices are gently processed, filled in small batches and packaged in a way that protects their aroma, even ground spices retain a large part of their natural flavour.
